Get Social This recipe is a staple in our home! It's meaty enough to fill up the whole family, and sweet enough the kids will love it. Goes great with mashed potatoes or stuffing. Of course I suggest adding a healthy veggie on the side! Some folks suggest meatloaf is maybe not a high class meal, but that doesn't mean it's not delicious! ...or affordable, or a great leftover meal. In my opinion all the good outweighs the supposedly bad stigma around meatloaf for supper. This recipe was adapted from a wonderful recipe on Allrecipe. I still remember the day I stumbled upon this meatloaf recipe that my daughter and boyfriend might actually eat! I love any kind of meatloaf, I grew up on it. Not them, they take a little more convincing. This recipe has really done the trick though. I've adapted it a little to our taste and made sure to keep it simple! So let's get to it! Preheat your oven to 350. I refrain from using extra veggies in this, because it gets kind of weird with the sweetness of the brown sugar. In one bowl mix all the ingredients below.
Now if you are one of those people that mix your meatloaf with your hands more power to ya. Thoroughly mix that meat mixture and pretend it doesn't look totally disgusting at this stage. Okay good. Now prepare your bread pan. Pack the brown sugar into the bottom of your pan until it's about a 1/4 inch thick layer. Then cover that layer with ketchup, yup more ketchup :) Now add your meat mixture on top of that. Bake at 350 for 1 hour. Ta-Da! You rock, and your family might actually say thank you for making them supper tonight! Good Luck!

Here is a solid budget dinner recipe. It's cheap and easy because the point is to use what is leftover. You know, the day before you go grocery shopping and there is just nothing good to eat. Turn here my friends, I got you. This is what I did however, use your own creativity here. Needs:

- Spices should really be up to you, but that is what I used :) Okay chop all that stuff up, throw it in a pot. Mix. Pause. *Take a hit or sip of your favorite substance. Okay get back to it... Mix until it boils. Turn it down cover it until is smells really gooood. *If it doesn't smell really good try adding different flavors, just don't get to out of hand. It really just came about a cold snowy night, and no one was going to the grocery store anytime soon. So I compiled what we had into a pot and ta-da! Delicious simple 3 ingredient chicken soup. I figured this could be a great staple the week before Christmas! Yes folks we are in major countdown mode... 5 days until Christmas morning and my 2 year old runs out to open her presents (I can't wait for that part :). 5 days until all the family is here, 5 days to prepare food, gifts, decorations... Not trying to stress anyone out or anything! My point is a simple soup that keeps great for leftovers is perfect for a pre-holiday dinner. So here it is, enjoy! *I prefer to add some spices: so if you choose add to taste Italian seasoning, S&P. Boil the chicken breasts covered by water the whole time, in a slow cooker or large pot. Boil the chicken for about 20 minutes. Enough time to wash and chop up the potatoes, then add all the potatoes to your pot as well. Keep them at a slow boil for 45-55 minutes, then add your frozen bag of peas. Just dump it in there, mix it up, and boil for several more minutes. I like to slow cook off my soups, so once it's done turn it down to medium-low for another 20-30 minutes. OH! the spices. According to www.spiceadvice.com
So even though I honestly forgot to add my spices until the very end, it is the best way to do it! Perfect... I love it when things actually work out like that. I hope my simple soup saves you some time this holiday season. Happy Holidays!

This recipe came about because of my kitchens lack off eggs. Also I love cornbread and crave it on the daily.
This recipe is perfect because one it's so easy... literally 2 steps. The little apple sauce cups you add to it are that health choice you make in the grocery store and then just never eat it. At least I don't, I like to think my daughter likes them but no luck there!
Mix and bake per the same directions on the Jiffy Muffin Mix box and enjoy! |
